Vegetables are low in calories and carbs and rich in fiber, vitamins, minerals and disease- fighting phytochemicals. They are also an excellent source of antioxidants which help neutralize harmful free radicals. This prevents oxidative damage and inflammation, both of which can contribute to heart disease and diabetes. The nutritional content of vegetables depends on the specific vegetable.

Growing Chinese Kale is extremely easy. These plants are very forgiving and do well with minimal care. Since these plants grow best under cooler conditions, if you live in an exceptionally warm climate, choose slow-bolting varieties. Seeds can be planted as soon as the soil can be worked and planted throughout the summer and fall. Sow seeds 1 cm apart in rows spaced 46 cm apart and in full sun. Seeds usually germinate in 10 to 15 days.
Seedlings should be thinned to one plant every 20 cm once they reach 8 cm tall. Provide water regularly, especially during dry spells. Provide plenty of mulch in the bed to help retain moisture and keep plants cool. Leafhoppers, cabbage aphids, loppers, and cutworms may become a problem. Watch plants closely for insect damage and use organic pest control if necessary. Keep the garden free of weeds to promote healthy plants as part of your regular care of Chinese Kale.
Nutrients:
Direct-seed choy sum into well-tilled garden beds that have been amended with a 2-inch layer of compost. Plant seeds 1/4 to 1/2 inch deep. Make sure you plant three seeds every 12 to 18 inches. Make sure seedlings are protected from wind, heat and drought. To speed up the germination you can soak the seeds overnight in water. Sow new rows of choy sum every two or three weeks.
Water and feeding- Water the choy sum patch at least once a week, checking during the week to ensure that the soil remains moist. Give the patch supplemental watering during dry spells.
Fertilize- Side-dress plants with compost three weeks after sowing seeds. Set compost in rings around individual plants, or in narrow bands several inches in front of each row. In either case, use a 1-inch layer of compost.
Nutrients:
Grow mustard in full sun or partial shade. Plant mustard in well-worked, well-drained soil rich in organic matter. Add aged compost to planting beds before planting. Mustard prefers a soil pH of 5.5 to 6.8. Either grow it in the pot, on the ground or using hydroponics method. To speed up the germination you can soak the seeds overnight in water.
Planting time. Sow mustard as early as 4 to 6 weeks before the average last frost date in spring. Sow succession crops every 4 to 6 weeks. Mustard requires 30 to 40 days to reach harvest. Plant crops so that they come to harvest before temperature average greater than 75°F (24°C). Sow mustard in autumn or early winter in mild winter regions. Seeds may be slow to germinate if the soil is too coo, 40°F (4.4°C) or less. Mustard grown in hot weather or long days will bolt and go to seed.
Planting and spacing. Sow mustard seed ½ inch (12mm) deep; when seedlings are large enough to handle thin them from 4 to 8 inches (10-20cm) apart; space rows 12 to 24 inches a(30-61cm) part.

Shanghai Pak choy requires nutrient rich, well-drained soil. The thick stems are juicy and sweet and need plenty of water to grow. Remove competitive weeds and till soil gently around the plants to increase oxygen levels for healthy root growth. Pak choy’s wide leaves are a target for foliage munching pests like snails and slugs. Use an organic slug bait to prevent holes and extensive damage to the plant.

Water spinach can be propagated either by seeds or by cuttings. Sow the seeds in fresh potting soil (sow about 0.5 centimetres deep). Ensure that you keep the seeds consistently moist. Also, remember that temperature should remain around 68 F (20 C). Germination occurs within a couple of weeks. To speed up the germination you can soak the seeds overnight in water. Growing spinach from cuttings is the easiest method to propagate it. Just cut several 30-40 cm long cuttings from young growth and plant 15 cm deep in potting mix.
In subtropical and tropical climate, you can grow spinach anytime. Choose a site with full sun and well- drained soil.
Nutrients:
Grow Coriander in a container filled with a lightweight commercial potting mixture. Plant the seeds 1/4 deep, spacing them 1 inch apart. Place the container where the plant is exposed to bright sunlight. If you live in a climate with hot summers, place the container in light shade, especially during hot afternoons. Check the potting soil daily. If the surface of the soil feels slightly dry, add water slowly to the container until water trickles through the drainage hole. Coriander may require water daily during hot weather. Unlike herbs grown in the ground, herbs grown in containers are unable to draw moisture from the surrounding soil. Fertilize Coriander once every two weeks, using a liquid organic fertilizer such as fish emulsion. Harvest Coriander regularly, beginning when the plants are 4 to 6 inches tall. Pick the outer leaves first so that the centre leaves continue to grow. Harvesting the plant at least once per week promotes continued growth throughout the season.

Tomatoes are very easy to grow from seed. You should start you seeds indoors using seed starting pellets. Keep the soil warm and dark until the seedlings appear. It's important to note that light/sun isn't crucial until sowing. Sowing from seeds about 7-10 days. After the tomato sprouts appear, move the plants to a brighter yet cooler location. This is where they'll need the light to continue growing nicely. The best time to grow tomato seedlings is at about 70ºF (25°C) during the day. As the tomatoes continue to grow until about 4" tall, transplant them to larger pots. Move the pots outside in the shade during the day and then bring them back inside at night. You should always 'harden' tomato plants before transplanting them into the garden.
These unique fruits are noted for their stripes, hence the name. When immature they are a light green with dark green stripes. When mature the stripes alternate between red and a yellow orange. Two inches fruit have a very tangy flavor, yields are very heavy, and quite early.
